Coconut Jam (Pandan Kaya)

  • Large egg – 4 pcs
  • Pandan leaves – 5 blades
  • Naco Coconut Cream – 1 box 200ml
  • Water – 140ml
  • Sugar – 180g
  • Salt – a pinch

STEPS:

  1. Cut pandan leaves into thin strips.
  2. Blend with water to yield panda juice.
  3. In a mixing bowl, sieve the pandan juice.
  4. Add sugar and salt, crack the eggs and mix well into mixing bowl.
  5. Add NACO coconut Cream 200ml and keep on stirring until evenly mix (3 minutes).
  6. Prepare double boiler, and place the pot over it. (tips: Ensure top bowl is able to fit into bottom pot).
  7. Stirring continuously over the boiling water until kaya thickens. Reduce flame to moderate for smoother jam texture.
